So, if we want to give someone a prem subscription, for example, do we now have to buy them the olives to do so from the store, or can we buy it with olives we already have and give them the item directly?
I can only find a method for the former.

You can gift olives directly to the user. I have not been able to determine if you can gift items.

Do you think people might start considering reselling olives in smaller quantities if you let them trade those?
Might people buy them in bulk to get more olive for their buck, and then sell them on at the normal price, or just below normal price, to the people who don't want to be forced to fork out $10 to buy 200 olives just to buy a Prem Ship and have some left over?
