I used to play ASW DD for fun in the past. Like the OP I did it with low level crews and DC. Here is how I usually played a round:
At first I chose north or south. Usually south, because the big, dangerous subs with a decent player at the wheel go there to harass our BBs there. But when I saw our best sub already going south I went north instead.
When the match starts I stayed around my BBs. Try to not get into their maneuvering, because they if you're in their comfort zone they either cant shoot or cant maneuver, both of which meaning they are likely to die very fast. So don't annoy them. Meanwhile watch the scouted area to see if a sub is about to come.
When the most certainly submerged enemy sub appears on your sonar your team can see it. Don't rush straight at it. Give the BBs a chance to decide what to do. Some have premium HH and might shoot the sub out of the water right away. Then your job is already done. If nobody shoots HH still don't blindly rush in. You have to flank the sub so that he can't point his nose or tail at you. This is especially important against KM subs because of their proximity fused torps.
When you have sunk the sub get back in save waters again. Then check if any enemy subs are still alive and try to locate them on the map. If you can find any move there, but stay clear of anything that might want to shoot you. If the enemy flagship got bombed get to your flag to protect it from enemy subs. There you don't need to actually shoot the enemy sub should any try to go for your flag. Lighting him up is a big help already. Most flags have HH to kill the sub themselves.
Yeah, that's how usually did it. Also don't use HH if you don't have shittons of credits. During events with random item drops you can easily rack up thousands of premium HH. But the regular ones are sh!t and way too expensive.
Hope it helps a bit. But don't delude yourself. AA yields more XP and more credits. And AA is easier too. So once you can use some decent AA guns do that if you want to level quicker. ASW, unfortunately, is not counted as personal attack. That's why your ASW attack goes to the shared attack pool. And this means the amount of XP you get depends on how good your team was.
