I've read in guides that pilots lose crew size gain per level after each classing, however these guides are quite old and I've missed out quite a few years of NF updating.

What I want to ask is a simple question: Do pilots still lose crew size gain upon classing?

yes. thts why some people classed their fighters to fighter only and not ace or sq leader. because they can put more vets in fighter than sq leader fp (considering same level). 
since fighter pilot has bigger crew size than sq leader
