I am looking for any explanation about Seaman and Planesman. I've already downloaded the Navyfield Guide but nothing talk about them. I have got a CV and i'm not sure how good and how can they influentiate in the game. Please, someone help me!

Upper left tab -> game guide -> sailors. It's explained there for you. Generally speaking
Seamen increase the ability of all sailors on your ship by a small amount. Planesmen are
used only for submarines and help replenish the air supply.

I see why you'd be confused about the planesman,but he has nothing to do with planes.Only useful for subs so don't worry about him.
A seaman on a CV is said to boost your fighter's ability,among other stats.An elite or +12 in Fighter stat classed as seaman is the best you can get.

A hero is the best you can get for a seaman, followed close behind by the "special sailors" from the rewards event (and the special sailor, with its free vets, may be better for those who can't afford massive overvetting). Far behind is the dual +12 eng/fighter I rolled awhile ago :-D
An elite fighter pilot (or bomber), classed as a seaman, is generally inferior since it gets a weak attribute in all the other stats, including key ones like engine, other pilot types, repair, and restore.
And for a planesman, while misnamed to be sure considering what he does, do remember that those two fins on the front of a submarine are called "diving planes," and are what he was named for.

Thanks for your help guys... I'm not quite sure about Seaman be a good choice in my fleet, in inspite of my crew be based in 3 DB, 2 TB, 2 Fighters. Do you recommend to have a Seaman? I've already trainned 2 but they are low lvl yet, about lvl 40. One of them, I got +12 bomber, and 9 stats above 10.

A seaman is more of a personal choice than anything else. Some players swear by them, others are fine using the slot for another pilot or engi. But, I would advise at least considering. As for the stats on the seaman, that's decent if those are the base stats, but as always, it depends on what the key stats are. Fighter is the most important, with the support (rep, rest, engine) being next, and bomber being third. Bomber stat on a seaman only really affects the level at which you can use TBs without losing the planes, and only slightly.
As for the rest, I think you're painfully shy of fighter pilots. Eventually you're going to want at least 4 of them, 6 preferrably.

Focus on the long road.
When/If you ever reach a PCV or CV, you are going to have 9 slots + BO and 2 gunners.
If you use your first 8 slots for pilots, you will have an empty slot (Seaman/Engineer/Repairman). You should be working on elevating a sailor to fill that slot eventually.
Also, just having 8 pilots usually isn't what you will end up.
My UK CV setup has 7 fighter pilots, 4 Torp Bombers, 2 DBs and a Chf Seaman.
My RM CV setup has 7 fighters pilots, 3 torps and 2 dbs. My seaman is too low level, so I have to work on getting him up to speed for the PCV and CV6.
